Oolongs are a separate class of teas. They are semi-fermented, and this is something between green and red teas, which is one of its features. Iron Kuan Yin, like all famous teas, has its own legend, both in the name and in the tea bush itself.

How to brew Te guan yin must be done carefully so as not to damage its rather sensitive leaves. The water temperature should be around 82-85°C. For brewing, it is best to use purified water. Before brewing, all tea utensils must be heated with hot water. We drain the first tea leaves almost immediately, washing the tea from dust. We brew the second and third, for 15 seconds. and so on, to your liking. Do not leave water in the gaiwan, otherwise the infusion will be bitter. This tea will last 5 to 6 infusions.
