The water temperature should be around 82-85\u00b0C. For brewing, it is best to use purified water. Before brewing, all tea utensils must be heated with hot water. We drain the first tea leaves almost immediately, washing the tea from dust. We brew the second and third, for 15 seconds. and so on, to your liking. Do not leave water in the gaiwan, otherwise the infusion will be bitter.
